Point one on the back side of the old and new switch you will find letters each letter is for what it does. Pointer two you will find double wire on some of these, like the black, purple, and the black and yellow wires.

I have the classic Perko switch, Off, 1, both and 2, with it wired up the way in the attached link, I have power to all 12v systems coming from the fuses block and the positive bank while in the “Off” position. Switching it to any other position doesn’t change a thing. Looking at your diagram, all your positive bank and fuses come from battery 2 and are NOT switched.
The only thing that is switched is power to the engine. Battery 1 is completely isolated from any loads other than the engine IF the switch is set to battery 1 or both.

There shouldn’t be much draw when all is off, but one of our grandkids climbed into the boat one day and flipped a few switches on the dash, which I didn’t discover right away. Could have had a dead battery at an inconvenient time if I hadn’t discovered it. The Perko OFF position prevents that possibility. I would not recommend leaving the switch in the “both” setting except in an emergency to start the boat.
While running the boat, I switch between A and B part way though the fishing day to make sure both batteries get some charge time on each trip.
